Remember the Spanish Shepherd’s Pie Meat Pie? With chorizo? Of course you do. It was in the last post. Yeah, we had purchased that chorizo in order to make this Portuguese Kale Soup. Luckily, we love chorizo so much that we had bought twice the amount we needed.
Making this made me realize just how much I want an immersion blender. Blending cupfuls of soup at a time in the food processor was tedious. But otherwise, the soup was straightforward and easy to make. It was also pretty tasty, reminiscent of collard greens with ham.
